This casserole is delicious!
It’s easier to make than a regular lasagna plus it’s low in points.

How I lightened up this recipe:
Using 96% lean ground beef helped to keep this low in points, one pound is only 12 points.
Instead of using jarred spaghetti sauce I made my own using tomato sauce.
Tomato sauce is 0 points, but even light spaghetti sauce in a jar has points.
Part-skim mozzarella cheese and 1% cottage cheese also helped to save points.
How to make Lasagna Casserole:
Bring a pot of water to a boil and cook the noodles according to the directions on the box then drain.
In a large skillet I started browning the ground beef with the onion.

In a saucepan I added the tomato sauce, seasonings and grated Parmesan cheese. Let it cook on medium heat until the sauce starts to simmer.

Next, pour the sauce into the ground beef.

Stir together the cooked noodles and cottage cheese.
Spray an 8×10 baking dish with nonstick cooking spray and pour in the noodles.

Top the noodles with the sauce then top with shredded mozzarella cheese.

Place it in the oven for 25 minutes or until the cheese is melted.
This casserole has 8 good size servings.
I like to serve it with a low point salad. It’s a filling meal!

You can also make this casserole ahead of time and keep it in the fridge until you’re ready. You’ll probably have to add a few minutes of baking time to make sure it’s heated through.

- 1 lb. 96% lean ground beef
- 1 small onion, chopped
- 8 oz. rigatoni pasta
- 30 oz. tomato sauce
- 1 teaspoon dried minced onion
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon grated Parmesan cheese
- 1 cup 1% cottage cheese
- 1 cup part-skim mozzarella cheese, shredded

Preheat oven to 350 degrees F. Spray an 8×10 baking dish with nonstick cooking spray.

In a large skillet brown the ground beef and onion. Drain any excess grease.

Add the tomato sauce, seasonings and Parmesan cheese to a saucepan. Bring the sauce to a simmer then add it to the ground beef.

Mix together the cooked noodles and cottage cheese. Add the noodles to the baking dish.

Pour the sauce over the noodles then top with the shredded mozzarella cheese.

Bake 25 minutes or until the cheese is completely melted.
