This is the ultimate cake recipe for the holidays!
Cranberries always remind me of Christmas. I love their vibrant red color.

I also love that this is an easy recipe. It takes about 10 minutes to prepare it and 5 minutes to frost it.
How I kept this cake low in points:
Instead of regular cake mix I used Pillsbury sugar free yellow cake mix. The sugar free cake mix has half the points.
Rather than using regular frosting I used fat free Cool Whip.
This cake was made using Sprite Zero. You can also use diet 7UP. You will not use eggs or oil, just the pop.
I don’t know why using soda with cake mix works, but it does. The cake is still delicious and you would never know.
How to make Cranberry cake:
I sprayed two 9 inch cake pans with nonstick cooking spray.
Add the cake mix to a large mixing bowl. Pour in the Sprite Zero and use an electric mixer to combine.
Mix on medium speed for two minutes.
Measure out 3/4 cup of cranberries then cut them in half. Fold the cranberries into the cake batter.
Divide the cake batter into the two cake pans. Bake the cake according to the directions on the box.
Once the cakes are done baking let them cool completely.
Place one cake on a cake stand and add half of the Cool Whip. Spread into an even layer then top with the second cake.
Add the rest of the Cool Whip and spread over the top and sides of the cake.
I topped my cake with fresh cranberries and loved the way it turned out!

- 1 box Pillsbury sugar free classic yellow cake mix
- 12 oz. Sprite Zero or Diet 7UP
- 3/4 cup cranberries (plus more if you're using as a garnish)
- 8 oz. fat free Cool Whip

Preheat oven to 325 degrees F. Spray two 9 inch cake pans with cooking spray.

Add the cake mix to a large mixing bowl and pour in the Sprite Zero.

Use an electric mixer on medium speed for two minutes.

Cut the cranberries in half then add them to the cake batter. Gently stir in the cranberries.

Add half of the cake batter to each pan. Bake 34-39 minutes or until a toothpick inserted in the middle comes out clean.

Let the cakes cool completely. Add one cake to a cake stand, add half of the Cool Whip and spread evenly over the cake.

Add the second cake and spread the rest of the Cool Whip on the top and sides. Top with fresh cranberries.
