Root Beer Floats were one of my favorite desserts when I was a kid.
The vanilla ice cream in the root beer was so good!! It was a real treat when I got one.
So I figured why not turn it into a cake?

I have a lot of cake recipes on my site where I use cake mix and soda to make the cake.
Just two ingredients is all it takes to make a delicious cake. No eggs and no oil.
The carbon dioxide bubbles in soda act as a leavening agent, that’s what makes the cake rise and makes it light and fluffy.
Way back when I made a cake with soda I had my kids try it without telling them. They had no idea it wasn’t a “regular” cake.
How to make a Root Beer Float Cake:
To keep this recipe low in points I used Pillsbury sugar free yellow cake mix and diet root beer.
Add the cake mix to a large bowl then pour in the diet root beer.
Use an electric mixer on medium speed to combine the cake mix and root beer.
Spray your cake pan with nonstick cooking spray and pour in the cake batter into an even layer.
Bake the cake according to the directions on the box. Once a toothpick inserted in the middle comes out clean it’s done.
Let the cake cool completely before adding the Cool Whip, then spread it over the cake in an even layer.
I topped my cake pieces with a maraschino cherry, but that’s optional.
If you have any leftover cake you’ll want to cover it and keep it in the fridge.

- 1 box Pillsbury sugar free yellow cake mix
- 12 oz. diet root beer
- 8 oz. fat free Cool Whip

Preheat oven to 325 degrees F.

Add the cake mix to a large mixing bowl. Pour in the diet root beer then use a hand mixer on medium speed to combine.

Spray a 9×13 baking dish with nonstick cooking spray. Pour the cake batter in an even layer.

Bake 35 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool completely then spread on the Cool Whip.
