This Cheese Tortellini Casserole is an easy dump and bake meal!
A lot of kids are back to school this week and this recipe is perfect for busy weeknights.
The prep is so easy, you don’t even need to cook the tortellini before baking it.

I used fresh tortellini in the refrigerated section of the grocery store, not the frozen kind.
If you want to use frozen tortellini you can let it thaw overnight in the fridge.
You can use fresh or frozen spinach in this casserole. I usually use fresh but they were out of it so I used frozen. It was still delicious!
How I kept this recipe lower in points:
I decided to skip the ground beef. The cheese tortellini is somewhat high in points so I decided to make it a vegetarian dish.
The marinara sauce I used was pretty low in points. 24 ounces was only 4 points.
Only using 1/2 cup of shredded mozzarella cheese saved quite a few points. Of course, having a large layer of melted cheese on top is delicious, but this dish is cheesy enough so I cut it back some.
The spinach and tomatoes are both zero points so those were perfect to add in.
How to make Cheese Tortellini Casserole:
First, I added the fresh tortellini to an 8×10 baking dish. Spread it out in an even layer.
Add the fresh or frozen spinach.
Cut the cherry tomatoes in half and add them in an even layer.
Pour a 24 ounce jar of marinara sauce over the tortellini, then add 1 cup of water.
Give it a good stir before covering the dish and baking for 20 minutes.
Once the 20 minutes is up remove it from the oven and uncover it. Stir the ingredients together again then top with the mozzarella cheese.
Put it back in the oven for 5 minutes, or until the cheese melts.

This dish is a little higher in points than what I usually make, but it’s totally worth it!
You can serve it with a low point salad or a 0 point vegetable.

Yield: 6 servings

- 20 oz. Giovanni Rana 5 cheese tortellini (fresh not frozen)
- 1 cup spinach, chopped
- 1 cup cherry tomatoes, halved
- 24 oz. Good & Gather tomato basil pasta sauce
- 1 cup water
- 1/2 cup part skim mozzarella cheese, shredded

Preheat oven to 425 degrees F.

Add the cheese tortellini to an 8×10 baking dish. Top with the spinach and cherry tomatoes.

Pour the pasta sauce over the tortellini followed by the water. Stir together then cover with foil.

Bake for 20 minutes.

Take the dish out of the oven and remove the foil. Stir the ingredients together then top with the mozzarella cheese.

Bake 5 minutes or until the cheese is melted.
