This Chicken Caesar Pasta Salad is an easy recipe, ready in less than 30 minutes!
It’s perfect for lunch, dinner or a side dish.

If you have leftover chicken or rotisserie chicken this recipe is perfect for it. It’s a great way to save time.
Instead of making my own Caesar dressing I bought Ken’s lite creamy Caesar dressing. You could also do a vinaigrette if that’s what you prefer.
I love making this dish in the summer. It’s cool and refreshing, plus it doesn’t make me too full.
What you need to make Chicken Caesar Pasta Salad:
- Shredded chicken breast
- Pasta (I used penne)
- Reduced fat Caesar dressing
- Romaine lettuce
- Shredded Parmesan cheese
- Croutons
- Lemon juice (optional)
- Salt and black pepper
How to make Chicken Caesar Pasta Salad:
I used a food scale to measure 4 ounces of pasta. Boil a large pot of salted water and cook the noodles according to the package directions.
Drain the noodles and let them cool off.
Shred the chicken breast and add it to a large bowl. Add the noodles and dressing then toss together.
To keep the salad low in points I only used 1/2 cup of croutons. I used a meat mallet to break up the croutons so it seemed like there were more.
Stir in the lettuce, croutons, Parmesan cheese, lemon juice, salt and pepper. That’s it!
I calculated this recipe as four servings, each serving is about 1 3/4 cups. If you wanted to serve this as a side dish you could change the serving size.

- 4 oz. penne pasta
- 1 boneless, skinless chicken breast, cooked and shredded
- 1/2 cup croutons
- 3 cups romaine lettuce
- 1/4 cup Parmesan cheese, shredded
- 1/2 cup Ken's lite creamy Caesar dressing
- Salt and pepper, to taste

Boil a large pot of salted water and cook the pasta according to the package directions. Drain the noodles and let them cool off.

Add the chicken, noodles and dressing to a large bowl and toss together.

Put the croutons in a zip up bag and use a meat mallet to break them into smaller pieces.

Add the lettuce, croutons, Parmesan cheese, lemon juice, salt and pepper to the bowl and stir together.
