This Greek Orzo Salad is the perfect side dish for summer grilling!
One half cup is only 3 points for blue, green and purple.
If you grilled a skinless chicken breast you could even have one whole cup for only 6 points. It’s very filling and delicious!

Even though it’s a Greek salad the taste of lemon gives it a summer like taste. It’s so refreshing!

This orzo salad has some typical Greek ingredients. Cucumber, tomatoes, red onion, oregano – which are all zero points!
Of course I had to add some feta cheese, I bought the reduced-fat feta.
My orzo took about 8 minutes to cook so while that’s cooking I cut up the cucumber, tomatoes and onion.
I also made the dressing, which is very easy.
I used a lemon juicer similar to this one:

I absolutely love it! I make salad dressing quite often and it comes in handy. After I squeeze the lemon I take the lid off and add the rest of my ingredients.
No need to dirty another jar!
Once the orzo was drained I put it in a mixing bowl and added the dressing. Then I added the rest of my ingredients.
You can eat it right away or let it sit in the fridge for an hour.
