Lasagna Casserole

Ingredients

  • 1 lb. 96% lean ground beef
  • 1 small onion, chopped
  • 8 oz. rigatoni pasta
  • 30 oz. tomato sauce
  • 1 teaspoon dried minced onion
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon grated Parmesan cheese
  • 1 cup 1% cottage cheese
  • 1 cup part-skim mozzarella cheese, shredded

Instructions

  • Preheat oven to 350 degrees F. Spray an 8x10 baking dish with nonstick cooking spray.
  • Bring a pot of water to a boil. Cook the rigatoni according to the directions on the box.
  • In a large skillet brown the ground beef and onion. Drain any excess grease.
  • Add the tomato sauce, seasonings and Parmesan cheese to a saucepan. Bring the sauce to a simmer then add it to the ground beef.
  • Mix together the cooked noodles and cottage cheese. Add the noodles to the baking dish.
  • Pour the sauce over the noodles then top with the shredded mozzarella cheese.
  • Bake 25 minutes or until the cheese is completely melted.
