I love a good casserole! This French Onion Chicken Noodle Casserole is delicious and lightened up.
It’s also a great recipe for leftover chicken or a rotisserie chicken.

Pretty much any dish that’s topped with crispy fried onions I know I’m going to love!
How I lightened up this recipe:
There are quite a few recipes out there for French Onion Chicken Noodle Casserole. While I’m sure they’re delicious they aren’t very healthy.
Most of the recipes use French onion dip that’s premade. One cup of this dip is 18 points.
I made my own dip using fat free sour cream and Lipton onion soup dip mix, which was only 6 points. That small change saved 12 points.
Instead of using regular cream of chicken soup I used Healthy Request cream of chicken soup. That saved 4 points.
I limited the amount of crispy onions I used since they are high in points. I measured out 1/2 cup and added it to a zip up bag. I used a meat mallet to break up the onions into smaller pieces.
To save points I only used 8 ounces of egg noodles. I used my food scale to weigh the noodles. I use my food scale all the time!

How to make French Onion Chicken Noodle Casserole:
The first thing I did was cooked my egg noodles according to the package directions. Do not overcook the noodles because they will also be baking in the oven.
Next I added the sour cream and French onion dip mix to a large bowl. Mix it together.
To the same bowl, I added the cream of chicken soup, cheese and shredded chicken. Stir everything together.
Last you will add the noodles to the bowl and mix together.
Spray a casserole dish with nonstick cooking spray and add the noodle mixture. Make sure it’s in an even layer and add the crispy fried onions.
Bake the casserole for 25 minutes.
That’s all there is to it! It’s an easy weeknight dinner.
I like to serve the casserole with a vegetable or a low point salad.

- 8 oz. egg noodles
- 1 cup fat free sour cream
- 1 tablespoon Lipton onion soup and dip mix
- 10.5 oz. Healthy Request cream of chicken soup
- 1/2 cup reduced fat Mexican cheese, shredded
- 1 1/2 cups boneless, skinless chicken breast, cooked and shredded
- 1/2 cup French's crispy fried onions

Preheat oven to 350 degrees F.

Cook the egg noodles according to the package directions. Do not overcook the noodles.

In a large bowl add the sour cream and dip mix, stir together.

Add the cream of chicken soup, Mexican cheese and chicken. Stir everything together. Add the egg noodles and stir together.

Spray a casserole dish with nonstick cooking spray. Add the noodle mixture in an even layer.

Put the crispy onions in a zip up bag. Use a meat mallet or rolling pin to break the onions into smaller pieces.

Top the casserole with the fried onions. Bake for 25 minutes.
