This Chicken Divan Casserole is absolutely delicious!

There are a few things I did to lighten up this recipe. The first was I used 98% fat free cream of chicken soup.
Next I used reduced fat Ritz crackers. I decided not to mix the crackers with melted butter and that saved a lot of points.
Using fat free sour cream, reduced fat sharp cheddar cheese and skim milk also helped to reduce points.
How to make Chicken Divan Casserole:
This recipe is perfect for leftover chicken or a rotisserie chicken. Either way you need 2 cups of shredded boneless, skinless chicken breast.
I used frozen chopped broccoli that I let thaw out. You can also use fresh broccoli.
I sprayed a 9 x 9 baking dish with no stick cooking spray. You can also use a small casserole dish.
Pour the chopped broccoli into the bottom of the pan in an even layer.

Top the broccoli with the cooked chicken breast.

In a small bowl mix together the cream of chicken soup, sour cream, skim milk, lemon juice, curry powder, garlic powder, onion powder, salt and black pepper.
Pour the mixture over the chicken and broccoli.

Top the soup mixture with the reduced fat sharp cheddar cheese.

Put the Ritz crackers in a zip up bag and use a meat mallet or rolling pin to turn them into crumbs. Pour the cracker crumbs over the cheese.

Bake for 30 minutes or until the cheese is melted and the crackers are golden.
I had a 1/2 cup of rice with my Chicken Divan Casserole which made it a 7 point meal. It was filling and delicious!

- 10 oz. chopped broccoli (If using frozen broccoli let it thaw)

- 10.5 oz. 98% fat free cream of chicken soup
- 1/2 cup fat free sour cream
- 1/4 cup skim milk
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon curry powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup reduced fat sharp cheddar cheese
- 10 reduced fat Ritz crackers

Preheat oven to 350 degrees F.
