If you like chicken fajitas you’re going to love this casserole!
This is filled with chicken, peppers, onions and a creamy cheese sauce. What’s not to like?
Plus it’s one of those easy recipes that’s perfect for a busy night.

I counted this recipe as four servings, and they’re large servings. Per serving it’s only 6 Weight Watchers points for the blue plan and purple plan, 8 points per serving for the green plan.
Eating this Chicken Fajita Casserole on its own is very filling, but you could also add a low point tortilla. I like the Ole Xtreme high fiber tortillas because they’re only 1 point each.
This recipe is great for a rotisserie chicken or leftover chicken. I had some chicken that needed to be cooked so I used that. I baked my chicken then cut it into thin strips.
How to make Chicken Fajita Casserole:
I started by cutting the green pepper, red pepper and yellow onion into thin strips. Spray a large skillet with cooking spray and cook over medium heat until tender but still a little crispy.
To help keep this recipe low in points I used reduced fat cream cheese. You’ll want it to be room temperature so it’s easy to mix together.
I used a 10 oz. can of diced tomatoes with green chilies. If you don’t like spicy food you can buy the mild can.
Mix together the cream cheese, diced tomatoes, salt and fajita seasoning in a large bowl and set aside. If you don’t have fajita seasoning you can use taco seasoning, both will be delicious!
Add the chicken, peppers and onion to the cream cheese mixture and stir together.
For the shredded cheese I used part skim mozzarella and reduced fat Mexican cheese. I like the flavor of the Mexican cheese but the mozzarella melts better, so I combined a half cup of each giving me 1 cup of shredded cheese.
I added a half cup of the cheese to the chicken mixture and stirred it together.
Spray a 2 quart casserole dish or baking dish with cooking spray and pour in the chicken fajita mixture.

Top with the remaining cheese and bake for 25 minutes.

You can top this casserole with cilantro or a dollop of sour cream. It would also taste great with white rice, brown rice or cauliflower rice.
This casserole also tastes great the next day for leftovers.

- 1 lb. boneless, skinless chicken breast, cooked and shredded
- 1 green bell pepper, sliced into thin strips
- 1 red bell pepper, sliced into thin strips
- 1 yellow onion, sliced into thin strips
- 4 oz. reduced fat cream cheese, room temperature
- 10 oz. diced tomatoes with green chilies (do not drain liquid)
- 1 1/2 tablespoons fajita seasoning
- 1/4 teaspoon salt
- 1/2 cup part skim mozzarella cheese, shredded
- 1/2 cup reduced fat Mexican cheese, shredded

Preheat oven to 350 degrees F.

Spray a large skillet with cooking spray and add the green peppers, red peppers and onion. Cook over medium heat for 5 minutes.

In a large bowl mix together the cream cheese, diced tomatoes, salt and fajita seasoning.

In a small bowl mix together the mozzarella cheese and Mexican cheese.

Add the chicken, peppers, onions and half of the shredded cheese to the cream cheese mixture. Stir together.

Spray a 2 quart casserole dish with cooking spray and add the chicken mixture. Top with the remaining shredded cheese.

Bake 25 minutes or until it is heated through and the cheese is melted.
