This is another delicious chicken casserole recipe!
It’s easy and cheesy! Plus it’s filling and low in points.
You only need a handful of ingredients to make it, which is always a bonus. It’s as easy as mixing everything together and pouring it into a baking dish to bake. That’s it!

How I lightened up this recipe:
There wasn’t a whole lot I had to do to make this recipe light. One thing was I used reduced fat Mexican cheese instead of regular.
That’s always an easy way to lower the points.
Personally, I don’t like using fat free cheese because it doesn’t melt well.
Instead of using regular sour cream, I used fat free sour cream. I don’t think there’s much of a difference in how they taste, especially in a casserole.
Fat free sour cream is just runnier than regular sour cream.
Other than that most of the ingredients are pretty healthy.
Shredded chicken breast, taco seasoning, salsa and corn.
This is another recipe that’s perfect for rotisserie chicken or leftover chicken.
I used frozen corn but you could also use canned corn.
How to make Fiesta Chicken Casserole:
In a large bowl add the sour cream, salsa and taco seasoning and mix them together.
Shred the chicken breast and add it to the bowl.
Also add the corn, rice and half of the shredded cheese, stir everything together.
Spray an 8×8 baking dish with nonstick cooking spray and pour in the rice mixture. Top with the remaining shredded cheese.
Cover the baking dish with foil and bake for 30 minutes.
This casserole is delicious as is or you can add some extras. I always top it with cilantro.
You could also add green onions, chives, sour cream, avocado or shredded lettuce.

- 2 cups boneless, skinless chicken breast cooked and shredded
- 1 cup instant rice
- 1 cup fat free sour cream
- 1 cup salsa
- 1 tablespoon taco seasoning
- 1/2 cup corn
- 1 cup reduced fat Mexican cheese, shredded, divided

Preheat oven to 350 degrees F. Spray an 8×8 baking dish with nonstick cooking spray.

In a large bowl add the sour cream, salsa and taco seasoning. Stir together.

Add the shredded chicken, rice, corn and half of the Mexican cheese. Mix together and add to the baking dish. Top with the remaining cheese.

Cover the baking dish with aluminum foil and bake for 30 minutes.
