This is a delicious, savory zucchini bread recipe!
If you grow your own zucchini chances are you have quite a bit on hand. This is a great recipe to use it up!

Buying zucchini from the grocery store works great too, which is what I did.
How I lightened up this recipe:
The original recipe for Zucchini Cheddar Bread calls for buttermilk. I saved a few points by using reduced fat buttermilk.
Instead of using regular sharp cheddar cheese, I used reduced fat sharp cheddar cheese. That saved about 6 points without changing the taste.
I used Bisquick Heart Smart instead of regular Bisquick. It didn’t save points, but it is better for you.
For this recipe I used an 8.5 x 4.5 size loaf pan.
How to make Zucchini Cheddar Bread:
This is one of the easiest bread recipes! The first thing I did was used a box grater to shred the zucchini.
You need 1 cup of shredded zucchini. I gave the zucchini a good squeeze to get rid of any extra liquid.
In a large bowl, I added the reduced fat buttermilk and egg then whisked them together.
Add the 2 cups of Bisquick to the egg mixture and use a rubber spatula to mix it together.
Next, I added the grated zucchini, sharp cheddar cheese and scallions. Mix it all together but don’t overmix.
Spray your loaf pan with nonstick cooking spray and pour in the batter.
Bake the bread at 350 for 45-55 minutes. Once a toothpick is inserted in the middle and comes out clean the bread is done.

- 2 cups Bisquick Heart Smart
- 1 cup reduced fat buttermilk
- 1 egg
- 1 cup grated zucchini
- 1 cup reduced fat sharp cheddar cheese, shredded
- 1 medium scallion, sliced

Preheat oven to 350 degrees F. Spray an 8.5 x 4.5 loaf pan with nonstick cooking spray and set aside.

In a large bowl add the buttermilk and egg. Whisk together.

Add the Bisquick to the bowl and mix together with a rubber spatula.

Add the zucchini, sharp cheddar cheese and scallions to the bowl and mix together, do not overmix.

Pour the batter into the loaf pan. Bake 45-55 minutes, or until a toothpick inserted in the middle comes out clean.
