This Creamy Tuscan Chicken is DELICIOUS!
It’s loaded with flavor, has a creamy sauce, but is still a light recipe.
You can keep it very light by eating it on its own or you can serve it with pasta or rice.

Either way, it’s a delicious and light dinner!
How I lightened up this recipe:
Using chicken breasts instead of chicken thighs helped to keep the fat content low.
Since the chicken breasts are cooked in creamy sauce they come out very juicy.
Most Tuscan Chicken recipes use heavy cream for the sauce. I used a combination of chicken broth and fat free half and half.
Letting the sauce reduce slightly and adding finely shredded Parmesan cheese helped to thicken up the sauce.
I used a nonstick skillet so I didn’t have to add any oil or butter. Instead, I used a little olive oil spray, which was 0 points.
How to make Creamy Tuscan Chicken:
To start I preheated a nonstick skillet over medium heat.
I seasoned the chicken breasts with salt, pepper and a little bit of garlic powder. I like using thin cut chicken breasts for this recipe.
Spray the skillet with olive oil spray and add the chicken breasts. I used thin cut chicken breasts for this recipe.
Cook the chicken breasts for 3 minutes on each side, then remove the chicken from the pan.
Give the pan another spritz of olive oil spray and add the minced garlic. Let that cook for 1 minute.
Add the chicken broth to the pan followed by the half and half. Let the sauce come to a light simmer then stir in the Parmesan cheese and Italian seasoning.
Both the tomatoes and chopped spinach can now be added to the pan. Let them cook until the spinach has wilted.
The final step is to add the chicken back into the sauce. I let it cook for about 3 minutes to heat the chicken back up.
If you have any leftovers you can store them in an airtight container in the fridge. It’s delicious the next day!

- 1 lb. boneless, skinless chicken breast
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 3/4 cup fat free half and half
- 1 1/2 cups cherry or grape tomatoes, cut in half
- 2 cups fresh chopped spinach
- 1 teaspoon Italian seasoning
- 1/4 cup finely shredded Parmesan cheese
- Salt and pepper, to taste
- Garlic powder (optional)
- olive oil spray

Preheat a large nonstick skillet over medium heat.

Spray the pan with olive oil spray. Add the chicken breasts and cook 3 minutes on each side. Remove the chicken from the pan and set aside.

Spray the pan with olive oil spray and add the minced garlic. Cook for 1 minute.

Add the chicken broth and half and half. Let it come to a light simmer then stir in the Parmesan cheese and Italian seasoning.

Add the tomatoes and spinach and cook until the spinach is wilted.

Place the chicken back in the pan and let it cook 3 minutes.
