This Creamy Chicken Noodle Skillet is perfect for those busy weeknights!
It’s ready in 30 minutes plus it’s an easy recipe your whole family will love.

Whether you have leftover chicken or a cooked rotisserie chicken, both would work great in this recipe. I used the chicken breasts from a rotisserie chicken
The creamy sauce is made using chicken broth, skim milk and flour. No need for cream of chicken soup!
For this skillet meal I used kluski noodles but you could also use egg noodles if you prefer. One of my daughters doesn’t like egg noodles so I try not to use them if I’m cooking for her too.
To make this easy skillet meal I started by bring a large pot of water to a boil. Once the water is boiling add the noodles and cook until al dente.
While I was waiting for the water to boil I started chopping my carrots, celery and onion. I melted a teaspoon of butter in a large skillet and added the veggies. I let them cook for about 4 minutes then added the garlic and let it cook one more minute.
I added 1 tablespoon of flour to the skillet and stirred it all together. Then I added in the chicken broth and skim milk.
Cook the mixture over medium-high heat until it starts to simmer. Reduce heat to medium then let it simmer for 5 minutes, or until the sauce thickens.
Then add in the chicken and noodles and stir it together. That’s it, dinner is done!
Now let’s talk Weight Watchers points. There are six servings in this recipe, each serving is about 1 1/2 cups. For the blue plan and purple plan it is 5 points per serving, the green plan is 6 points.

- 8 oz. Kluski noodles
- 1 cup carrots, chopped
- 1/2 cup celery, chopped
- 1 small yellow onion, chopped
- 1 teaspoon butter
- 2 cloves garlic, minced
- 1 tablespoon all purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup skim milk
- 2 cups cooked chicken breast, shredded

Bring a large pot of water to a boil. Add the noodles and cook until al dente.

Melt the butter in a large skillet. Add the carrots, celery and onion. Cook for 4 minutes then add the garlic. Continue cooking 1 minute. Add the flour and stir together.

Add the chicken broth and skim milk. Turn on medium-high heat until it starts to simmer. Reduce heat to medium and cook 5 minutes or until it thickens.

Add in the cooked chicken and noodles. Stir together and serve!
