Here’s another easy and tasty weeknight meal!
It’s also low in points – only 6 points per serving.

You also need minimal ingredients to make this delicious dish:
- Boneless, skinless chicken breast (1 lb.)
- Diced frozen hash browns
- Onion
- Mozzarella cheese
- Buffalo Wild Wings parmesan garlic sauce (yum!)
- Salt, black pepper, and garlic powder
How I kept this dish light:
I used frozen diced potatoes so I didn’t have to peel and dice them.
Three cups of Ore Ida diced hash browns is only 5 points!
Using boneless, skinless chicken breast is 0 points, I used 1 lb.
The rest of the points come from the Parmesan garlic sauce and mozzarella cheese.
Since I seasoned the chicken breast and potatoes with garlic powder, salt, and pepper I didn’t need to use a lot of the Parmesan garlic sauce.
Two tablespoons of the wing sauce was 5 points.
To lighten up the cheese I used part-skim mozzarella shredded cheese. One cup was 12 points.

How to make this Parmesan Garlic Chicken and Potato Skillet:
The most time consuming part of this recipe is cooking the potatoes, they take 11-13 minutes.
I sprayed a nonstick skillet with olive oil spray, then added the potatoes and onion. Season with garlic powder, salt, and pepper.
Cover the skillet and occasionally stir the potatoes.
While the potatoes are cooking I got the chicken ready. I cut the chicken into 1/2 inch pieces, then seasoned with garlic powder, salt, and pepper.
Once the potatoes were done cooking I put them in a bowl and covered them with foil. You want to keep the potatoes covered so when the cheese is added it melts quickly.
Add the chicken to the skillet and cook until it’s no longer pink.
Pour the Parmesan garlic sauce over the chicken and stir together, then add the potatoes back in and mix together.
Sprinkle the mozzarella cheese over the mixture and cover until the cheese melts.
This dish goes great with any 0 point vegetable!

Yield: 4 servings (6 points per serving)

- 1 cup part-skim mozzarella cheese, shredded
- 1/2 teaspoon garlic powder, divided
- Salt and pepper, to taste
- 1/2 onion, diced

Spray a skillet with olive oil spray. Add the potatoes, onion, 1/4 teaspoon garlic powder, salt, and pepper. Cover the skillet and cook 11-13 minutes, stirring occasionally.

While the potatoes cook prepare the chicken. Cut it into 1/2" pieces then season with 1/4 teaspoon garlic powder, salt, and pepper.

When the potatoes are done cooking pour them into a bowl and cover with foil.

Add the chicken to the skillet and cook until no longer pink. Add the Parmesan garlic sauce and stir together. Pour the potatoes back in and stir together.

Top with the mozzarella cheese and cover with the lid until the cheese melts.
