This White Chicken Skillet Lasagna is creamy, cheesy, and easy!
Not only is it easy to make but it’s also easy to clean up. Everything is cooked in one skillet – including the noodles.
This has all the flavor of a white chicken lasagna, but you don’t have to mess with making lasagna noodles.

Using a rotisserie chicken for this recipe also makes it easy. You can also use leftover chicken breast.
How I kept this recipe light:
Most white lasagna recipes use butter and cream. I skipped the butter all together.
Instead of using heavy cream, I used fat-free half and half. That helped to save a whopping 40 points!
I mixed together the half and half with chicken broth and cooked the noodles in the liquid. The noodles absorb a lot of the liquid and the starch from the noodles helps to thicken the sauce.
Per usual I stuck to using boneless, skinless chicken breast instead of dark meat.
Limiting the amount of cheese I used was also a great point saver. I used a small amount of grated Parmesan cheese in the dish and a small amount of part-skim mozzarella cheese to top the skillet at the end.

How to make White Chicken Skillet Lasagna:
I used a food scale to weigh 6 ounces of bow tie pasta.

Using a food scale is the best way to make sure your points are accurate.
To a large skillet, I added the chicken broth, fat-free half and half, noodles, and seasonings.
Cook the noodles according to the package directions, stirring occasionally. During the last two minutes of cook time stir in the fresh spinach and chicken.
Once the time is up stir in the Parmesan cheese and turn off the heat.
Top it with the mozzarella cheese and cover until the cheese melts.
If you like a little heat you can top it with red pepper flakes.
I like to top it with fresh basil or parsley.

- 2 cups boneless, skinless chicken breast, cooked and shredded
- 2 cups chicken broth
- 1 cup fat-free half and half
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon Italian seasoning
- 6 ounces bow tie pasta
- 2 cups fresh spinach
- 2 tablespoon grated Parmesan cheese
- 1/2 cup part-skim mozzarella cheese, shredded
- Salt and pepper, to taste

To a large skillet add the chicken broth, half and half, bow tie pasta, garlic powder, onion powder, Italian seasoning, salt, and pepper.

Bring to a simmer/light boil and cook according to the directions on the package.

During the last two minutes of cook time stir in the spinach and chicken.

Turn off the heat and stir in the Parmesan cheese. Top with mozzarella cheese and cover until the cheese melts.
