White Chicken Skillet Lasagna

Ingredients

  • 2 cups boneless, skinless chicken breast, cooked and shredded
  • 2 cups chicken broth
  • 1 cup fat-free half and half
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon Italian seasoning
  • 6 ounces bow tie pasta
  • 2 cups fresh spinach
  • 2 tablespoon grated Parmesan cheese
  • 1/2 cup part-skim mozzarella cheese, shredded
  • Salt and pepper, to taste

Instructions

  • To a large skillet add the chicken broth, half and half, bow tie pasta, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  • Bring to a simmer/light boil and cook according to the directions on the package.
  • During the last two minutes of cook time stir in the spinach and chicken.
  • Turn off the heat and stir in the Parmesan cheese. Top with mozzarella cheese and cover until the cheese melts.
