These Chicken Alfredo Lasagna Roll Ups are full of cheesy deliciousness!
We’re talking mozzarella cheese, Parmesan cheese, noodles, a light alfredo sauce and chicken. Those are all some of my favorite things!
This is a great recipe for leftover chicken or you can use a rotisserie chicken.

With all recipes it’s best to double-check the points based on the ingredients you use.
For these Chicken Alfredo Lasagna Roll Ups I used store bought alfredo sauce, I used Prego alfredo light sauce. You could also make your own light alfredo sauce, just adjust the points.
Usually when I want to make lasagna I only do it on the weekend since it’s time consuming. Turning them into roll ups is easy and it takes less time to bake.
Everything in this recipe is already cooked so you bake it to heat everything through and get the cheese to melt.
It only takes 30 minutes to bake these roll ups. A regular lasagna can take up to an hour! That makes this an easy weeknight meal.
One tip I have is to make sure you don’t boil the lasagna noodles too long. You want them to be al dente since they will continue to cook in the oven.
Chicken Alfredo Lasagna Roll Ups are 7 points each for blue and purple, 8 points each for green. To me they are very filling so I just serve mine with a low point salad.

Yield: 6 servings (7 points per serving for blue and purple, 8 points per serving for green)

- 6 lasagna noodles
- 2 cups boneless, skinless chicken breasts, cooked and chopped
- 1 1/2 cups part-skim mozzarella cheese, shredded and divided
- 1/4 cup Parmesan cheese, shredded
- 1 1/4 cups light alfredo sauce, divided
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon oregano
- 1/4 teaspoon salt

Preheat oven to 350 degrees F.

Boil the lasagna noodles until they are al dente. Drain and lay out the noodles on wax paper.

In a mixing bowl add the chicken, 1/2 cup of mozzarella cheese, 1/4 cup of alfredo sauce, garlic powder, onion powder, oregano and salt. Mix together.

Spray an 8×8 baking dish with cooking spray.

Add 1/6 of the chicken mixture to a lasagna noodle leaving the top 1 inch without chicken. Roll up from the bottom and place in the baking dish. Repeat with the rest of the noodles.

Top the lasagna roll ups with the remaining alfredo sauce, Parmesan cheese and mozzarella cheese.

Bake for 30 minutes.
