This Tortellini Casserole is so good….and easy!
It’s the perfect dinner for those crazy weeknights when you’re short on time.
The first thing I did to save time was buy a cooked rotisserie chicken. It’s such an easy way to save time!
I only used the chicken breasts which I chopped up. My kids will usually eat the legs and I give some of the thighs to my cat, so it doesn’t go to waste.

Fresh broccoli sounded good in this so I used 2 cups. I saved time by cooking the broccoli in with the tortellini. I waited until there was only 1 minute of cook time left then added the broccoli.
Not only did that save time, it was also one less dish I had to clean. 🙂
I bought pre-made Alfredo sauce as another way to save time. This is the one I used:

One cup of the sauce was 8 points. I checked regular “Alfredo sauce” on the app and it came up as 28 points for 1 cup. Yikes!
Once I drained the tortellini and broccoli I added the Alfredo sauce to the sauce pan and stirred in the chicken, tortellini and broccoli.
You can add it to a 9″ baking dish or a small casserole dish.
First I sprayed the dish with no-stick cooking spray, then added the tortellini mixture.
I added 1/2 cup part-skim mozzarella cheese to the top then popped it in the oven until the cheese melted, about 15 minutes.
That’s it! So easy and delicious.

- 2 cups chicken breasts, chopped
- 2 cups cheese tortellini
- 2 cups broccoli, chopped
- 1 cup Classico Four Cheese Alfredo
- 1/2 cup part-skim mozzarella cheese, shredded
- Salt and pepper, to taste

Preheat oven to 350 degrees F.

Cook tortellini according to the directions on the package. During the last minute of cook time add the broccoli to the pot, then drain.

Add the Alfredo sauce to the pot and stir in the chicken. Add the tortellini and broccoli and stir together.

Spray a baking dish with no-stick cooking spray. Add the tortellini mixture and top with mozzarella cheese.

Bake 15 minutes, or until the cheese is melted.
