It’s official, I have stocked up on cans of pumpkin!
I’m sad that summer is coming to an end, but fall is my favorite season. I’m ready for sweatshirts and jeans.

Today I had Pumpkin Pancakes on my mind. I decided to do a spinoff of my PB2 Pancakes, which are peanut butter and banana flavored pancakes.
The main ingredients of the PB2 Pancakes are mashed banana and egg. I tried making these pancakes with pumpkin and eggs but it didn’t work as well.
I added Bisquick Heart Smart to help hold them together.
These Pumpkin Pancakes also have pumpkin pie spice and cinnamon which give them a delicious flavor.
How to make Pumpkin Pancakes:
In a medium bowl I added the canned pumpkin, eggs, Bisquick, skim milk, pumpkin pie spice, cinnamon and vanilla extract.
I used a whisk to combine all of the ingredients.
The key to cooking these pancakes is to do it low and slow. I cooked them on medium-low heat for about 3 minutes on each side.
I used a nonstick frying pan that I spritzed with cooking spray. Not using butter or oil helped to cut back on the calories and fat.
To scoop the pancake batter I used a 1/4 cup measuring cup which gave me 4 pancakes. The recipe can easily be doubled if you want to make more.
Since eggs are 0 points with my Personal Points plan each pancake is only 1 point for me.

Pumpkin Pancake Toppings:
I love my pancakes topped with fat free Reddi Wip, I can add up to 3 tablespoons for 0 points.
Sugar free maple syrup is another great option. I use Maple Grove Farm sugar free syrup which is 0 points for up to 3 tablespoons.
You could also top them with chopped walnuts or pecans.

Yield: 4 pancakes

- 1/2 cup canned pumpkin
- 2 eggs
- 1/3 cup Bisquick Heart Smart
- 2 tablespoons skim milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon

Preheat a nonstick frying pan or griddle over medium-low heat.

In a medium bowl add all of the ingredients and whisk together.

Spray the pan with nonstick cooking spray. Pour 1/4 cup of the pancake batter into the pan or griddle. Let it cook for 3 minutes then flip and cook the other side for 3 minutes.

Pumpkin pancakes are best served warm.
