Not only are these Banana Breakfast Cookies delicious, they’re also healthy!
Using overripe bananas helps to naturally sweeten the cookies while the oatmeal helps to keep you full.
And they taste great with a cup of coffee!

They’re also great for breakfast on the go.
One batch makes 20 cookies. With my WW points, they are only 1 point each.
Plus these cookies are much healthier than processed granola bars.
How to make Banana Breakfast Cookies healthy:
Instead of using regular peanut butter I used PB2 Powder. It’s lower in points than regular peanut butter but still has the same delicious flavor.
I’ve used PB2 Powder in a lot of recipes. Some of my favorites are:
- Frozen Peanut Butter Cups
- Peanut Butter Banana Smoothie
- Baked Oatmeal Bars
- Thai Chicken with Peanut Sauce
- Thai Peanut Noodles
There are also chocolate chips in this recipe which add a little bit of sweetness. I limited the amount of chocolate chips to 2 tablespoons to keep it low in points.
How to make Banana Breakfast Cookies:
In a medium mixing bowl add the PB2 Powder and water. Stir together until it is cream.
Next, add in the two ripe bananas and mash them.
Add in the cinnamon, baking powder, baking soda, salt and vanilla extract. Mix together.
The final step is to stir in the oatmeal and chocolate chips. The mixture should be wet enough to stick together.
Line a baking sheet with parchment paper. I used a tablespoon to scoop out the dough. Each cookie was a heaping tablespoon. The dough does not expand or go flat while baking so I pressed each cookie down to form a cookie shape.
Bake for 10 minutes then let them cool.
I store my leftover cookies in an airtight container in the fridge.

- 1/4 cup PB2 Powder
- 3 tablespoons water
- 2 overripe bananas
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 tablespoons chocolate chips
- 2 cups quick oats

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

In a medium mixing bowl add the PB2 Powder and water. Stir together.

Add in the bananas and mash them with a fork, then mix together with the PB2 Powder.

Next, add the cinnamon, baking powder, baking soda, salt, vanilla extract and chocolate chips. Mix together.

Stir in the quick oats and combine all of the ingredients.

Use a tablespoon and scoop out a heaping tablespoon to make each cookie. Flatten the cookie batter to form a cookie shape.

Bake for 10 minutes then let the cookies cool.
