This sandwich is everything you could possibly want – it’s delicious, filling and low in points!
It’s also easy to make and great for meal prep.
You can cook some chicken breasts ahead of time and assemble your sandwich the day you want it.

How to make this sandwich low in points:
I used a whole wheat bun that was only 2 points for my plan. Besides being low in points it’s more filling than a regular white bun.
Pesto is delicious, but it’s not very low in points. It’s made with olive oil which is where most of the points come from.
Limiting the pesto to 1 tablespoon still gave it a delicious flavor while keeping it low in points.
I used boneless, skinless chicken breast instead of chicken thighs since it’s 0 points.
A sandwich isn’t complete without cheese. 🙂 I used Sargento ultra thin provolone cheese, which is only 2 points for one slice.
The rest of the toppings I used were 0 points, lettuce and tomato.
How to make a Chicken Pesto Sandwich:
I seasoned a boneless, skinless chicken breast with garlic powder, onion powder, salt and pepper.
You can bake the chicken breast or cook it in a pan. If I’m doing meal prep I like to bake 4 chicken breasts to have for the week.
Once you have cooked chicken breasts you just need to assemble the sandwich.
If I’m eating my sandwich at home I like to toast the bun, but that’s optional.
I add a tablespoon of pesto to the bottom bun then add the chicken, cheese, tomato and lettuce.
This sandwich is much better than regular old lunch meat. Plus it’s warm and filling.
You can make this sandwich your own by switching up some of the ingredients. Try a different cheese, add some red onion or top with arugula. It’ll still be low in points!

- 1 boneless, skinless chicken breast
- 1 whole wheat hamburger bun
- 1 slice Sargento ultra thin slice of provolone cheese
- 1 tablespoon pesto
- Lettuce
- Toamto

Season chicken breast with garlic powder, onion powder, salt and pepper. Bake or cook in a nonstick pan until chicken reaches an internal temperature of 165 degrees F. (I bake my chicken at 400 degrees F. for 20 minutes)

Toast the hamburger bun (optional). Spread the pesto on the bottom bun. Add the cooked chicken, provolone cheese, tomato and lettuce.
