With fall around the corner, I have apple recipes on my brain.
This Apple Cinnamon French Toast is so good I’ll be eating it all year round!
It’s not just perfect for breakfast, it’s great for dessert too.

How I kept this recipe light:
For the bread I used Sara Lee 45 calorie whole wheat honey bread. Most of the Sara Lee 45 calorie bread slices are only 1 point each.
I kept the apple mixture light by using a small amount of light butter and reducing the amount of brown sugar.
Most apple cinnamon recipes use a ton of butter and sugar. These lightened up apples are still delicious!
Using plain, unsweetened almond milk instead of regular milk helped to lighten up this recipe.
When it was time to cook the French toast I used a nonstick pan with a little spray of nonstick cooking spray.
Of course French toast is delicious when cooked in butter but that would add a ton of points.
How to make Apple Cinnamon French Toast:
The first thing I did was peel and slice the apple.
Then I added a teaspoon of light butter to a nonstick saucepan, then the apple slices.
Stir in the cinnamon and let the apples cook for 2 minutes.
In a small bowl mix together the cornstarch and water. Pour the mixture over the apples.
Let the apples cook for another 3 minutes.
At this point, I Preheated a nonstick pan over medium heat.
While the apples were cooking I added the almond milk, eggs, vanilla and cinnamon to a shallow dish.
Whisk the ingredients together.
Spray the nonstick pan with cooking spray. Take a slice of bread and dip both sides into the milk mixture.
Add the bread to the nonstick pan and cook 2-3 minutes on each side, or until it’s golden brown.
Repeat with the remaining slices of bread.
When the French toast is done add two slices to a plate and top with the apple cinnamon mixture.
I topped mine with some fat-free Reddi Wip. You could also use a maple syrup of your choice or add some powdered sugar.

- 4 slices Sara Lee 45 calorie bread
- 1 apple
- 1 teaspoon light butter
- 1 tablespoon brown sugar
- 1 teaspoon cornstarch
- 1 tablespoon water
- 2 eggs
- 1/2 cup plain, unsweetened almond milk
- 1/2 teaspoon cinnamon, divided
- 1/2 teaspoon vanilla extract

Peel and slice the apple. Melt the butter in a saucepan then add the apple slices and 1/4 teaspoon cinnamon. Cook for 2 minutes.

In a small bowl stir together the cornstarch and water, then add it to the apples. Cook 3 more minutes.

Preheat a nonstick frying pan on medium heat.

In a shallow dish add the eggs, almond milk, vanilla extract and 1/4 teaspoon cinnamon. Whisk together.

Spray the frying pan with nonstick cooking spray. Place both sides of a slice of bread into the milk mixture then add to the pan. Cook 2-3 minutes on each side, until the bread is golden brown.

Top two slices of French toast with half of the apple mixture, then repeat with the remaining ingredients. Add any other toppings of your choice.
