These Apple Pie Egg Rolls are only 2 points each! They can be made in the air fryer or baked in the oven.

I used granny smith apples for this dessert. That’s usually my go-to apple for desserts.
The filling for the Apple Pie Egg Rolls is apples, cinnamon, brown sugar, lemon juice and Splenda. If you don’t like using artificial sweetener you can use sugar, just make sure to add the extra points.

All you have to do for the filling is to peel the apples and chop them, then add the lemon juice to the apples and stir together. In a small bowl mix together the brown sugar, Splenda and cinnamon.
Add the cinnamon mixture to the apples and stir it together.
Next you’re ready to start making the egg rolls. The egg roll wrappers are pretty easy to work with but they are delicate.
I laid out the egg roll wrapper and added about 2 tablespoons of the apple pie filling to the center. I folded up the bottom then folded in the sides. After that I rolled up the egg roll.
When you get to the end you want to dip your finger in water and got the outer edge of the egg roll wrapper wet and sealed it.

Once the egg rolls are all made you can either bake them or put them in the air fryer. I prefer making them in the air fryer.
I use my air fryer all the time and not just for my recipes. I have two teenage daughters that love chicken nuggets and pizza rolls. I think making them in the air fryer is much easier than baking them in the oven.
These Apple Pie Egg Rolls are 2 points each for blue, green and purple. I like to add fat-free whipped cream and sugar-free caramel sauce. One tablespoon of the caramel sauce adds 1 point. All together my egg roll was 3 points.

Yield: 6 servings (2 points per serving for blue, green and purple)

- 6 egg roll wrappers
- 2 granny smith apples
- 1 tablespoon lemon juice
- 2 tablespoons granulated Splenda, divided
- 1 tablespoon brown sugar
- 1/2 teaspoon cinnamon, divided

Start by peeling and chopping the apples. Add the apples to a bowl and stir in the lemon juice.

In a small bowl add the brown sugar, 1 tablespoon of Splenda and 1/4 teaspoon cinnamon. Pour over the apples and mix together.

Lay out one egg roll wrapper and add 2 tablespoons of the apple pie mixture. Fold up the bottom of the egg roll wrapper and fold in the sides. Roll up the egg roll. When you get to the end dab your finger in water and wet the edge of the egg roll wrapper, then seal it closed.

Repeat with the remaining egg roll wrappers.

Add 1 tablespoon Splenda and 1/4 teaspoon cinnamon to a small bowl and stir together. Spray the egg rolls with olive oil spray and sprinkle with the cinnamon mixture.

Cook egg rolls in the air fryer at 400 degrees for 8 minutes, flipping the egg rolls half way through.

Bake egg rolls in the oven at 400 degrees F for 8 minutes, flipping half way through.
