Apple Cinnamon French Toast

Ingredients

  • 4 slices Sara Lee 45 calorie bread
  • 1 apple
  • 1 teaspoon light butter
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 2 eggs
  • 1/2 cup plain, unsweetened almond milk
  • 1/2 teaspoon cinnamon, divided
  • 1/2 teaspoon vanilla extract

Instructions

  • Peel and slice the apple. Melt the butter in a saucepan then add the apple slices and 1/4 teaspoon cinnamon. Cook for 2 minutes.
  • In a small bowl stir together the cornstarch and water, then add it to the apples. Cook 3 more minutes.
  • Preheat a nonstick frying pan on medium heat.
  • In a shallow dish add the eggs, almond milk, vanilla extract and 1/4 teaspoon cinnamon. Whisk together.
  • Spray the frying pan with nonstick cooking spray. Place both sides of a slice of bread into the milk mixture then add to the pan. Cook 2-3 minutes on each side, until the bread is golden brown.
  • Top two slices of French toast with half of the apple mixture, then repeat with the remaining ingredients. Add any other toppings of your choice.
