If you’re on TikTok you’ve likely seen this viral Grinder Salad Sandwich.
I saw it and knew I needed to try it!
But I also knew I wanted to lighten it up.

The original recipe uses regular mayonnaise. I used a mixture of light mayonnaise and fat-free sour cream.
It was still creamy, but it was fewer points.
For the bun, I used Aunt Millie’s mini-sub buns. Usually, they’re 6 points each, but I removed some of the insides of the bun, so it was fewer points.
Each bun is a little over 2 oz. Using a food scale, I scraped out the inside until it was 1 1/4 oz.
Instead of the bun being 6 points, that brought it down to 3 points.
Most of the Grinder Salad Sandwich recipes use salami, it’s 4 points for only 1 ounce.
To save points I used turkey pepperoni. Twelve pepperoni is only 1 point.
How to make a Grinder Salad Sandwich:
I started by making the dressing. In a small bowl, I added the light mayonnaise, sour cream, red wine vinegar, red onion, banana peppers, oregano, garlic powder and red pepper flakes. You want to mix that together.

Slice the iceberg lettuce, I used about 1/2 cup. Add that to the bowl and mix it with the salad dressing.

Get your Aunt Millie’s mini sub bun ready by scraping out some of the inside. It should weigh 1 1/4 oz.
If you use a different mini-sub make sure to double-check the points.
To one side of the sub bun add the ham and turkey pepperoni.
On the other side, add the part-skim mozzarella cheese slice. You could also use provolone cheese, but that’s 3 points vs. 2 points for the mozzarella.

Place the sub under the broiler until the meat is heated up and the cheese is melted.
The final step is to add the lettuce mixture, tomato or any other toppings you’d like.
This sandwich is delicious and filling! I’ve made them two days in a row now because they’re so good.
