If you want your house to smell like fall, you need to make these muffins!
My daughter asked why the house smelled like cider mill donuts. 🙂

Besides smelling great these muffins are tasty and lightened up.
How I lightened up these muffins:
One thing I did was replaced the oil with unsweetened applesauce. That helped to reduce the calories and fat but also add nutrients and fiber.
I used Bisquick Heart Smart instead of flour or regular Bisquick. It’s low in fat, cholesterol free and a good source of calcium.
After making a few small changes these muffins were only 3 points each. I decided to use regular sugar instead of an artificial sweetener since it only made the muffins 4 points each.

How to make Pumpkin Muffins:
This recipe is so easy to make!
I added the Bisquick Heart Smart, pumpkin puree, sugar, applesauce, pumpkin spice, cinnamon, egg and milk to a medium bowl.
Using a rubber spatula I mixed the ingredients together, don’t overmix.
Spray a muffin tin and fill up each cup half way with batter.
Bake the muffins at 400 for 14-16 minutes.
These muffins are great for breakfast on the go!
Once the muffins have cooled you can store them in an airtight container in the fridge or wrap them individually in plastic wrap and keep them in the fridge.
I like to wrap them individually so I can just grab a muffin and go!
Pumpkin muffins are also perfect for a snack or dessert.

Yield: 12 muffins

- 2 cups Bisquick Heart Smart
- 1/2 cup pumpkin puree
- 1/4 cup sugar
- 1/4 cup applesauce
- 1 egg
- 1/4 cup skim milk
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon cinnamon

Preheat oven to 400 degrees F. Spray a muffin tin with nonstick cooking spray.

In a medium bowl add all of the ingredients. Mix together using a rubber spatula, do not overmix.

Fill each muffin cup up half way. Bake 14-16 minutes, once a toothpick inserted in the middle comes out clean.
