Shrimp Fajitas are super easy to make and delicious!
You will want to put these on your permanent rotation, they’re that good.

I made a homemade fajita seasoning that only takes a few minutes. You need:
- Chili powder
- Cumin
- Garlic powder
- Onion powder
- Oregano
- Black pepper

All you need to do is add the ingredients to a bowl and stir. It’s that easy!
How to make Shrimp Fajitas:
The first thing I did was make the fajita seasoning.
You need raw, peeled and deveined shrimp. Add the shrimp to a bowl and mix with the fajita seasoning.
Heat a large nonstick skillet over medium heat. I use a nonstick skillet so I don’t have to waste points on oil.
Instead, I use olive oil cooking spray. It has the taste of olive oil without the extra calories.
I used two bell peppers for this recipe, one red and one orange. You can use whatever colors you like.
Cut the bell peppers and a small onion into strips. Let them cook for 5 minutes, until they’re somewhat soft.
Next, I pushed the peppers and onion to the side of the pan and added my shrimp.
Cook the shrimp for 2 minutes on each side or until they’re no longer translucent.
I added the juice from 1/2 of a lime then mixed together the shrimp and peppers.
The points for this recipe do not include the taco shells. There are so many different brands you can use so I just did the points for the shrimp filling.

All that’s left to do is add your favorite toppings!
I like to add fat free sour cream, cilantro or Pico de Gallo.
Avocado or guacamole is also delicious. Just make sure you check and add any extra points.

Yield: 2 servings (2 fajitas per serving)

- 12 oz. raw, peeled & deveined shrimp
- 2 bell peppers (I used red and orange), cut into strips
- 1 small onion, sliced
- 1 tablespoon Chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Juice from 1/2 lime
- Olive oil cooking spray

Preheat a large nonstick skillet over medium heat.

In a small bowl add the chili powder, cumin, garlic powder, onion powder, oregano, salt and pepper. Mix together.

Add the shrimp to a medium bowl and mix together with the fajita seasoning.

Spray the pan with olive oil spray and add the peppers and onion. Cook for 5 minutes, stirring occasionally.

Push the peppers to the side and add the shrimp. Cook for 2 minutes then turn the shrimp over and cook 2 minutes, or until the shrimp is no longer translucent.

Add the lime juice and stir everything together.
