You’re going to love these Chicken Fajita Quesadillas!

Not only is it delicious but it’s also low in points. With my Personal Points I can have one quesadilla for only 3 points.

It’s also easy to make, perfect for leftover chicken or a store bought rotisserie chicken. I used boneless skinless chicken breasts because they are 0 points for me.

To help keep the quesadillas low in points I used Ole Xtreme high fiber tortillas because they’re only 1 point each.

I started by slicing up the bell peppers and onion. I used half of a red bell pepper, yellow bell pepper and green bell pepper. You can use a combination of your favorite peppers.

Add it to a nonstick skillet with 1 teaspoon of olive oil and cook over medium heat for 5 minutes.

Remove the peppers and onion and add the chicken, fajita seasoning and water.

You can use homemade fajita seasoning or store bought. I just used store bought.

Once the chicken is heated through you can add the peppers and onion back in.

Next add the chicken fajita mixture to half of the tortilla. Top with two teaspoons of shredded Mexican cheese.

Cook the quesadilla 2-3 minutes on each side.

That’s it! It’s so quick and easy to make these quesadillas.

I like to eat mine with sour cream and salsa. You could also top them with cilantro for an extra kick of flavor.

They’re so good and a recipe the whole family will love!

Ingredients
  • 2 cups cooked, shredded chicken
  • 1 tablespoon fajita seasoning mix
  • 2 tablespoons water
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1 small yellow onion, sliced
  • 1 teaspoon extra virgin olive oil
  • 4 Ole Xtreme high fiber tortillas
  • 1/2 cup reduced fat Mexican cheese, shredded
Instructions
  1. Add the olive oil, sliced peppers and onion to a nonstick skillet on medium heat. Cook for 5 minutes stirring occasionally.

  2. Remove the peppers from the pan, add the chicken, fajita seasoning and water. Stir together and cook until the chicken is heated through. Add the peppers and onion back to the pan.

  3. Lay out a tortilla. Add the chicken mixture to half of the tortilla, then add 2 tablespoons of shredded cheese.

  4. Add the tortilla back to the pan and cooked 2-3 minutes on each side. Repeat with all of the tortillas.

I do these on Meatless Monday with Black Beans instead of chicken. I also bake them in the oven after I have filled the tortillas @ 450 until crispy. This lets me do 3 or 4 at a time and everyone eats together.
