Chicken Fajita Pasta is my new favorite dinner!
It’s delicious, filling and low in points.
Only 3 points per serving for blue and purple (could be less for purple if using whole wheat pasta) and 5 points per serving for green.
Each serving is 1 1/2 cups. You could easily double the serving and it’s still low in points!
Here’s what you need to make Chicken Fajita Pasta:
- 1 lb. boneless, skinless chicken breast
- Green pepper
- Red pepper
- Fajita seasoning
- Diced tomatoes with chilies
- Half & half
- Penne pasta
You can always mix up the peppers if you prefer orange or yellow, you need two peppers for the recipe.
For the fajita seasoning I just used store bought. You could also make your own if you’d like.
I made homemade fajita seasoning for my One Pan Chicken Fajitas. That recipe is 0 points for blue and purple.
If you don’t like your food a little spicy you can use regular diced tomatoes instead of diced tomatoes with chilies.
Sour cream, cilantro and green onions make great toppings for this dish! Just be sure to add any extra points for the sour cream.
I used penne pasta for this dish because it’s my favorite. You can use any type of pasta you want, just make sure to weigh it. Bow tie pasta would work great too!
Yield: 6 servings (each serving is 1 1/2 cups, 3 points per serving for blue and purple, 5 points for green)
- 1 lb. boneless, skinless chicken breast, cut into 1" pieces
- 1 tablespoon fajita seasoning
- 1 green pepper
- 1 red pepper
- 1 onion
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes with green chilies
- 1/4 cup half and half
- 5 oz. penne pasta
- Salt and pepper, to taste
Bring a pot of water to a boil and cook the pasta according to the directions on the box.
Spray a non-stick pan with olive oil spray. Add the chicken and half of the fajita seasoning.
While the chicken is cooking cut the peppers and onion into slices.
Once the chicken is cooked remove it from the pan. Add the peppers and onion to the pan with the rest of the fajita seasoning. Cook for 4 minutes.
Add the garlic to the pan and cook for 30 seconds. Add the cooked chicken, diced tomatoes and half and half and stir together. Stir in the pasta and cook for 5 minutes, or until the liquid is absorbed.
Taste the pasta and season with salt and pepper if needed.
