This Chicken Quesadilla Pie is only 2 Freestyle points per serving! Plus it is a quick and easy recipe, perfect for those crazy weeknights.

This is actually a recipe I used to make when I was low carb dieting, but I’ve made some changes.
The “pie crust” is a soft taco shell. I used one Ole Xtreme high fiber tortilla wrap. It’s only 1 Freestyle point.

The filling for the Chicken Quesadilla Pie is boneless, skinless chicken breast, cilantro, red onion and reduced fat cheddar cheese.
I used to use regular cheddar cheese but changed it to reduced fat since it is fewer points.
If you are not a fan of cilantro you can omit it. If you don’t like red onions you can substitute it with green or white onions.
There are so many recipes that I make changes to because I’m a picky eater. It’s all about making food how you will enjoy it.
This is what I love about Weight Watchers. You can still eat whatever you want, sometimes you just have to make a few simple changes. I don’t feel like I’m missing out on anything.
I used a rotisserie chicken for this recipe. It’s something I do quite often to save time.
Although I only use the chicken breasts (with skin removed) the rest of the chicken doesn’t go to waste. My kids always want a chicken leg!
The thighs I usually save as treats for my cat and dog.





Yield: 6 Servings (2 points per serving for blue and purple, 4 points for green)

- 1 Xtreme Ole high fiber tortilla
- 2 cooked boneless, skinless chicken breasts, cut into small pieces
- 1/2 cup cilantro, chopped
- 2 tablespoons red onion, chopped
- 1/4 cup reduced fat cheddar cheese, shredded
- 1/2 cup part skim mozzarella cheese, shredded
- 2 eggs
- 1/2 cup skim milk
- 1/8 teaspoon salt
- pinch of pepper
- 1/8 teaspoon garlic powder

Preheat oven to 425 degrees F.

In a medium bowl mix together the chicken, cilantro, red onion and reduced fat cheddar cheese.

In a small bowl add the eggs, milk, salt, pepper and garlic powder. Whisk it together.

Spray a 9″ pie pan with no-stick cooking spray.

Add the tortilla to the pie pan.

Next add the chicken mixture.

Pour the egg mixture over the chicken mixture, then sprinkle the mozzarella cheese on top.

Bake 20 minutes or until the egg mixture is set in the center.

I put this through the recipe builder using 4 servings and it came up as 2 points per serving. Six seemed too small of a portion. Hope this helps someone.
