I love making quesadillas! It’s a great way to make something I love, but keeping it low in points.
I use the Ole Xtreme High Fiber Tortillas. They are only 1 point each!
There is so much you can do with them. They’re also great for tacos!
Some other quesadilla recipes I’ve made are Buffalo Chicken Quesadillas, Western Quesadillas and Veggie Quesadillas.
The inspiration for these Spinach and Artichoke Dip Quesadillas comes from a Spinach and Artichoke Dip Pizza I made.
I liked the topping so much I figured why not use it for a quesadilla!?
These quesadillas are really easy to make. I heated up my pan while I mixed together the filling, that way the pan was nice and hot!
The filling of the quesadillas is cream cheese, chopped spinach, mozzarella cheese, sour cream, Parmesan cheese, artichokes and garlic.
To lighten up the recipe I used reduced-fat cream cheese and fat-free sour cream.

They are minor changes that don’t impact the taste. These quesadillas are still delicious!
One quesadilla is 6 points for blue, green and purple. I cut each quesadilla into three pieces so if you’re looking at the picture you can have 3 pieces for 6 points.
I think that’s pretty low in points for some delicious spinach and artichoke dip!

Yield: 4 quesadillas (6 points each for blue, green and purple)

- 4 Ole Xtreme High Fiber Tortillas
- 4 oz. reduced-fat cream cheese, room temperature works best
- 5 oz. frozen chopped spinach, thawed
- 1/2 cup part-skim mozzarella cheese, shredded
- 1/2 cup fat-free sour cream
- 1/4 cup artichoke hearts, chopped
- 2 tablespoons Parmesan cheese, shredded
- 2 teaspoons garlic, minced
- 1/2 teaspoon salt

Preheat a frying pan on medium/low heat.

In a large bowl mix together the cream cheese, spinach, mozzarella cheese, sour cream, artichoke hears, Parmesan cheese, garlic and salt. Divide into four portions.

Spread one portion of the dip onto half of a quesadilla and fold in half. Spray frying pan with no-stick cooking spray and place quesadilla in pan. Heat for 2-3 minutes on each side. Repeat with the rest of the ingredients.
