These Buffalo Chicken Quesadillas are perfect for lunch or a light dinner!
They’re also very easy to make!
I cheated and bought a rotisserie chicken. It only took me 15 minutes to make these quesadillas.
To keep these quesadillas low in points I bought the Ole Xtreme High Fiber Tortillas. They’re only 1 point each!
I wasn’t sure if the grocery store would have them right now, but they had a ton!

The first thing I did was removed the chicken breasts, shredded them and added it to a mixing bowl.
I used buffalo wing sauce, reduced fat cream cheese (room temperature) and part skim mozzarella cheese for the chicken mixture.
I added it all to the mixing bowl with the chicken and stirred it to combine.
Then it was time to split the chicken mixture in half. I had enough to make two quesadillas.
You’ll want to put half of the chicken mixture on one half of a tortilla, then fold the top over.
I let them cook in a frying pan for 3-4 minutes on each side.
That’s all there is too it! I added a little bit of fat-free sour cream and chives to the top.

Yield: 2 Quesadillas (6 points per quesadilla for blue and purple, 10 points per quesadilla for green)
- 2 small boneless, skinless chicken breasts, cooked and shredded
- 1/4 cup buffalo wing sauce
- 1 oz. reduced-fat cream cheese (room temperature)
- 2 oz. part-skim mozzarella cheese, shredded
- 2 Ole Xtreme High Fiber Tortillas

Pre-heat a frying pan over medium heat.

Add the chicken, buffalo wing sauce, cream cheese and mozzarella cheese to a bowl and stir to combine.

Add half of the chicken mixture to one half of a tortilla. Fold the top over, then repeat with the second tortilla.

Heat the quesadillas 3-4 minutes on each side. Optional: serve with fat-free sour cream and chives.
