This Cilantro Lime Rice is fresh and tasty – perfect as a side or the base of a burrito bowl.
It would go perfect in my Copycat Chipotle Chicken Burrito Bowl.
As a side dish it also goes well with steak, fish, chicken, or shrimp. The possibilities are endless!
You only need a few ingredients to make this rice:
- Long grain rice
- Cilantro
- Lime
- Better Than Bouillon (roasted chicken)
- Salt
The recipe calls for 1 cup of uncooked rice, which makes about 3 cups of cooked rice.
In the Weight Watchers recipe builder, I made it 6 servings. That is 1/2 cup per serving.
Six servings makes it 4 points per serving.
You could also do 12 servings (1/4 cup per serving). That would make it only 2 points per serving.

How to Make Cilantro Lime Rice
The first thing I did was put my rice in a strainer and rinsed it. Besides rinsing off the excess starch, it makes the rice more separated instead of sticky.
Add the rice to a saucepan and pour in 2 cups of water. At this time, I also added 1 teaspoon of Better Than Bouillon.
The Better Than Bouillon helps to give the rice more flavor.
Bring the rice to a simmer, cover it, and reduce the heat to low. Let the rice cook for 15 minutes, stirring occasionally.
While the rice cooks, use a grater to get 1 teaspoon of lime zest.
You also want to chop 1/2 cup of cilantro into small pieces.
Once the rice is fully cooked, stir in the lime zest, lime juice, chopped cilantro, and salt.
You can also cook the rice in a rice cooker or Instant Pot.
My daughter bought me a rice cooker for Christmas a few years ago and I absolutely love it. It makes cooking rice so easy and it always comes out perfect.
Serving Suggestions
This is the perfect side dish for any Mexican food.
Tacos – beef tacos, steak tacos, chicken tacos, or shrimp tacos. Cilantro lime rice goes great with tacos.
Burritos – serve the rice as a side or put it right in your Burrito, just like Chipotle!
Fajitas – skip the tortillas and serve it with a side of rice to keep it low in points.
You can also serve it as a side with steak, chicken, fish, or shrimp.
Yield: 6 servings (1/2 cup per serving)
