This is my new favorite recipe! It’s delicious, full of fresh ingredients, and low in points.
It’s amazing that just a few simple ingredients can transform chicken breast into something so delicious.
Another bonus is it’s very easy to make, perfect for those busy weeknights.
The Ingredients
- Roma tomatoes
- Fresh basil
- Olive oil
- Garlic
- Chicken breast
- Mozzarella cheese slices
- Balsamic glaze
I also used garlic powder, onion powder, oregano, basil, salt, and pepper to season the chicken breast.
This recipe is only 2 points per serving and feeds 4 people.

How to Make Bruschetta Chicken
Start by making the tomato topping so the flavors can meld while cooking the chicken.
Cut the Roma tomatoes into bite-size pieces and add them to a mixing bowl. Do the same thing with the basil.
Mince 2 cloves of garlic and add that to the bowl. I only use fresh garlic, it’s much better than the garlic in the jar. Once you try it, you’ll never go back to the jarred stuff.
I use this garlic press. You don’t even need to peel the garlic before you mince it and it’s dishwasher safe.
Once the tomatoes, basil, and garlic are in the bowl you want to add 2 teaspoons of olive oil.
Season with salt and pepper and stir it together. Set it aside while you prepare the chicken.
The easiest way to cook chicken breast is to make sure it’s all the same thickness. I use a meat mallet to pound out the chicken.
Season both sides of the chicken breast with garlic powder, onion powder, oregano, basil, salt and pepper.
Heat a nonstick skillet over medium heat. Add the chicken breast to the pan.
I like my chicken on the thin side. It only takes about 3 minutes on each side to cook.
After the first side of the chicken is cooked, flip it, then add the mozzarella cheese slices. Cover the pan and let it cook for 3 minutes.
Once the chicken is fully cooked add it to a plate and top with the tomato mixture.
Serving Suggestions
Serving the Chicken Bruschetta with a low point side salad will make for a filling, low point meal.
A side of pasta is another great option, I served mine with angel hair pasta.
Any type of vegetable would make a great side. Green beans and broccoli are great options.
You could also serve it with rice or cauliflower rice.

- 1 lb. boneless, skinless chicken breast (4 pieces about 1/4" thick)
- 3 Roma tomatoes, cut into bite-size pieces
- 1/4 cup fresh chopped basil
- 2 cloves garlic, minced
- 2 teaspoons olive oil
- 2 slices part-skim mozzarella cheese slices (cut in half)
- 1 tablespoon balsamic glaze
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon basil
- 1/8 teaspoon oregano
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- Salt and pepper, to taste

Add the tomatoes, basil, garlic, olive oil, salt and pepper (to taste) to a mixing bowl. Stir together and set aside.

In a small bowl add the garlic powder, onion powder, basil, oregano, salt, and pepper. Mix the seasonings together then season both sides of the chicken breast.

Heat a nonstick skillet over medium heat. Add the chicken breast and cook for 3 minutes, then flip. Top the chicken with the cheese slices, cover the pan and cook for 3 minutes, or until the internal temperature reaches 165 degrees F. (Note: if your chicken breasts are thicker than 1/4 inch it will need additional cooking time.)

Place the chicken breasts on a plate and top with the tomato mixture.
