My favorite thing about burrito bowls is that you can customize them with everything you love!
The best part about going to Chipotle is picking all of the fresh ingredients you want.
I like my burrito bowls with cilantro lime rice, romaine lettuce, fresh pico de gallo, cheese, corn, chicken and sour cream.

There are two Chipotle copycat items in the burrito bowl, the chicken and the rice.
The WW points that I include only account for the chicken and rice. Since everyone likes different toppings with their burrito bowls you can add them in the recipe builder.

There are four servings in this recipe. Each serving includes 1/2 cup of rice and one chicken breast.
How to make Copycat Chipotle Chicken Burrito Bowls:
I started by making the rice. I like to use a rice cooker to make my rice. It’s by far the easiest way to make it!
All you have to do is add the rice and water to the rice cooker and turn it on. There’s no need to stir it.
You can also cook the rice on the stovetop according to the directions on the package.
While the rice was cooking I started getting the chicken ready. I mixed together all of the seasonings and added it to both sides of the chicken breast.
I cooked my chicken in a grill pan for 4-5 minutes on each side. You could also cook it on a grill or bake it in the oven.
When the rice was done cooking I added lime juice and fresh chopped cilantro.
After that I started assembling my burrito bowl. I had some of my homemade Pico de Gallo on hand so I used that in my burrito bowl. You could also use salsa.
To assemble the bowl I added 1/2 cup of rice, a chicken breast, Pico, corn, lettuce and cheese.
I like to top mine with sour cream but you could also use Greek yogurt.
These burrito bowls are also great for meal prep! Just store it in an airtight container in the fridge until you are ready to eat it.
It’s easiest if you keep the warm food (chicken and rice) in a separate container, that way you can pop it into the microwave to re-heat.
If you want to keep this recipe even lower in points you could use riced cauliflower instead of rice.
Other toppings you could add include avocado, black beans, green onion, red onion or peppers.

Yield: 4 servings

- 1 lb. boneless, skinless chicken breast
- 1 cup jasmine rice, uncooked
- 1/4 teaspoon ground coriander
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Juice from one lime
- 1/2 cup cilantro, chopped
- Corn, lettuce, Pico de Gallo, avocado, cheese, black beans, onions, sour cream, Greek yogurt, black beans (doublecheck points if using these ingredients)

Cook the rice in a rice cooker or according to the directions on the package.

While the rice is cooking add the ground coriander, cumin, chili powder, salt, black pepper, garlic powder and onion powder to a small bowl. Add to both sides of the chicken.

Cook the chicken 4-5 minutes on each side in a grill pan.

Add the lime juice and cilantro to the rice, stir together.

Assemble the bowls by adding 1/2 cup of rice and 1/4 of the chicken to four bowls. Add any additional toppings.
