If you’ve never tried chimichurri sauce you’re missing out!
Chimichurri sauce is delicious with chicken, steak, tacos, rice, and potatoes.
Basically, you can put it on anything!

These Chimichurri Roasted Potatoes are the perfect side dish! They go great with chicken, steak, fish or pork.
It’s also a vegetarian friendly side dish.
How to make Chimichurri Roasted Potatoes:
I like to make the chimichurri sauce ahead of time so it’s even more flavorful, but it’s not necessary.
Add the fresh parsley and cilantro, dried oregano, extra virgin olive oil, garlic, white wine vinegar and salt to a food processor and press the chop button about 5 times.
I used 1 lb. of baby potatoes. Red skin or Yukon gold work great.
Since I left the skin on the potatoes I made sure to clean them first. After that I cut each one in half.
Line a baking sheet with parchment paper and add the potatoes.

I sprayed the potatoes with olive oil spray and seasoned them with salt and black pepper.
Next, I put the potatoes in the oven for 15 minutes.
Once the time I was up I pulled the potatoes out and flipped them. I sprayed the other side with olive oil spray and added more salt and black pepper.
Put the potatoes back in the oven for 10-15 minutes.
When the potatoes are done cooking put them in a large bowl. Add the chimichurri sauce and toss together.
That’s it! It’s an easy and delicious side dish.

Yield: 4 servings

- 1 lb. baby potatoes, cleaned and cut in half
- Olive oil spray
- Salt and pepper, to taste
- 2 tablespoons extra virgin olive oil
- 1/2 cup fresh cilantro
- 1/2 cup fresh parsley
- 1 clove garlic
- 1/2 tablespoon white wine vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt

Preheat oven to 400 degrees F.

Add all of the chimichurri ingredients to a food processor. Pulse 5 times.

Line a baking sheet with parchment paper and add the potatoes. Spray with olive oil spray and season with salt and pepper. Bake for 15 minutes.

Pull the potatoes out and turn them over. Spray them again with olive oil spray and season with salt and pepper. Cook 10-15 minutes or until the potatoes are cooked through.

Add the potatoes to a large bowl. Pour in the chimichurri sauce and toss to coat.
