Chimichurri Roasted Potatoes

Ingredients

  • 1 lb. baby potatoes, cleaned and cut in half
  • Olive oil spray
  • Salt and pepper, to taste

For the chimichurri sauce:

  • 2 tablespoons extra virgin olive oil
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh parsley
  • 1 clove garlic
  • 1/2 tablespoon white wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 400 degrees F.
  • Add all of the chimichurri ingredients to a food processor. Pulse 5 times.
  • Line a baking sheet with parchment paper and add the potatoes. Spray with olive oil spray and season with salt and pepper. Bake for 15 minutes.
  • Pull the potatoes out and turn them over. Spray them again with olive oil spray and season with salt and pepper. Cook 10-15 minutes or until the potatoes are cooked through.
  • Add the potatoes to a large bowl. Pour in the chimichurri sauce and toss to coat.
