These delicious potato wedges are soft on the inside and crispy on the outside!
They make a great side dish or even snack. Plus they can be made in the air fryer or oven.

The amount of points will depend on the size of your potato. My potato was 12 ounces and I cut it into 8 large wedges.
You can make these Crispy Potato Wedges in the air fryer or the oven. Either way you make them there isn’t any oil which helps to reduce the amount of points.
A while back I made an Italian Stromboli that is still one of my favorite recipes. I topped it with garlic powder, Italian seasoning and dried minced onion.
I loved those seasonings together so I figured why not add them to my potato wedges? I also added some Parmesan cheese, salt and pepper.
All of the ingredients for these Crispy Potato Wedges are ones I always have on hand. They’re a great side with dinner and I can whip them up in minutes!
How to make Crispy Potato Wedges:
The first thing I did was cleaned my potato, then dried it off.
Next I cut the potato in half lengthwise. Lay the potatoes down on the flat side then cut in half again, and another time. You should have 8 potato wedges.
In a small bowl I mixed together the dried minced onion, Italian seasoning, garlic powder, Parmesan cheese, salt and black pepper. Stir together.
I placed the potatoes on a sheet pan then sprayed them with 0 point cooking spray, then loaded them up with the seasonings.
To cook the potato wedges in the air fryer add them in a single layer. Set to 400 degrees for 9-10 minutes or until they’re crispy.
If you’re baking them in the oven you can just leave them on the baking sheet and bake them for 35 minutes at 400 degrees.
Both ways give you crispy potato wedges, the air fryer just takes less time.
You can serve them with your favorite dipping sauce or eat them as is.

- 1 (12 oz.) russet potato
- 1 teaspoon grated Parmesan cheese
- 1 teaspoon dried minced onion
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Cooking spray

Wash and dry the potato. Cut the potato in half then lay each half flat and cut again, then again. You should have 8 wedges.

In a small bowl mix together the Parmesan cheese, dried minced onion, Italian seasoning, garlic powder, salt and black pepper.

Lay the potatoes on a sheet pan and spray with cooking spray. Evenly sprinkle the seasonings over the potatoes.

Add the potatoes to the air fryer basket in a single layer. Cook at 400 degrees 9-10 minutes or until golden and crispy on the outside.

Bake the potatoes at 400 degrees F. for 35 minutes or until golden and crispy on the outside.
