This Sliced Potato Pie is an easy and delicious side dish!
It goes great with chicken, steak of fish.
The WW points are low too! Only 1 point per serving for the purple plan, 2 points per serving for the blue plan and green plan.

I thinly sliced the potatoes and added garlic, Italian seasoning and Parmesan cheese. It’s so simple yet delicious.
For this recipe I used 1 lb. of russet potatoes. I still had some leftover from when I made the Five Guys Cajun Fries Copycat Recipe.
One pound of russet potatoes is 10 points for blue and green, for purple it’s zero points.
I used a mandoline to make sure the potatoes were all the same size. I did the 3 mm size so they were thin and cooked through quickly.
You can leave the skin on the potatoes or you can peel it, I peeled my potatoes.
Once I ran the potatoes through the mandoline I added them to a mixing bowl. Instead of using regular olive oil I used olive oil spray because it’s zero points.
I added some fresh minced garlic, Italian seasoning, Parmesan cheese, salt and black pepper to the potatoes and mixed it together.
Next I placed the potatoes in a pie pan that was sprayed with nonstick cooking spray.

Using aluminum foil I covered the potatoes and baked them for 20 minutes, removed the foil and baked them another 25 minutes.
This potato recipe is super easy, it just takes some time in the oven.
You can serve the Sliced Potato Pie as is or you can serve it with sour cream.
I love that this pie is delicious and filling!

Yield: 6 servings (1 point per serving for purple, 2 points per serving for blue and green)
- 1 lb. russet potatoes
- 2 cloves garlic, minced
- 1/2 teasoon Italian seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup Parmesan cheese, shredded
- Olive oil spray

Preheat oven to 400 degrees F.

Use a mandoline to slice the potatoes. Add the potatoes to a mixing bowl.

Spray the potatoes with olive oil spray then add the garlic, Italian seasoning, salt, pepper and Parmesan cheese. Mix together.

Spray a pie pan with nonstick cooking spray. Layer the potatoes slices in the pie pan then cover with aluminum foil.

Bake for 20 minutes then remove the foil and bake 25 more minutes.
