This is one of the easiest meals you will ever make!
Sausage & Potatoes will only take 15 minutes to make in the air fryer. That’s including chopping time!
If you’re baking it in the oven it will still only take you 25 minutes total.

Another bonus is this is low in points. Only 3 points per serving for purple, 6 points for blue and green.

It’s filling and delicious!
I used chicken sausage to keep this recipe low in points.
The exact brand I bought was Simple Truth Italian Chicken Sausage. It’s only 3 points per link.
You can use any chicken sausage you’d like, just make sure to doublecheck the points.
I also used 1 lb. of Yukon gold potatoes. It was about 3 small/medium potatoes. I weighed them to make sure I had exactly 1 lb.
To make the Sausage & Potatoes I sliced the sausage into about 1/2 inch pieces and cut the potatoes into small cubes.
I also sliced 1/2 of a small onion.
Once everything was cut up I added it to a bowl and sprayed it with olive oil then added garlic powder, Italian seasoning, salt and pepper.
If you’re cooking this in he air fryer you will probably have to do it in two batches. You want to make sure it’s in a single layer so it cooks evenly. You will cook it for 10 minutes stirring halfway through.
To bake it in the oven you will want to spray a baking sheet with olive oil and add the sausage and potatoes. Bake for 20 minutes stirring halfway through.
Either way you decide to cook it they are both easy!

Yield: 4 servings (3 points per serving for purple, 6 points for blue and green)

- 4 chicken sausage links (I used Simple Truth Italian Sausage), cut into 1/2" slices
- 1 lb. Yukon gold potatoes (peeled and cut into small cubes)
- 1/2 yellow onion, sliced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

Add the sausage, potatoes and onions to a mixing bowl. Spray with olive oil then add the garlic powder, Italian seasoning, salt and pepper. Mix together.

Add half of the mixture to the air fryer. Cook at 400 degrees for 10 minutes stirring halfway through. Remove from air fryer and repeat with the remaining ingredients.

Preheat oven to 400 degrees F.

Add the sausage, potatoes and onions to a mixing bowl. Spray with olive oil then add the garlic powder, Italian seasoning, salt and pepper. Mix together.

Spray a baking sheet with olive oil and add the sausage and potatoes. Bake for 20 minutes stirring halfway through.
