It only takes a few minutes to prepare, then 15 minutes to bake. Dinner is ready in under 30 minutes!

I’ve said before that I don’t really care for salmon, but my kids love it. It’s fun to come up with different salmon recipes that they love.
You only need a handful of ingredients to make this Parmesan Crusted Salmon:
- Salmon fillets
- Panko breadcrumbs
- Shredded Parmesan cheese
- Parsley (fresh)
- Garlic powder
- Egg
- Salt
- Lemon (optional)
How to make Parmesan Crusted Salmon:
I started by preheating the oven since it only takes a few minutes to get the salmon ready.
In a small bowl I whisked an egg and set it aside.
Then, in a shallow bowl I added the Panko breadcrumbs, shredded Parmesan, garlic powder and parsley. Use a fork and mix it all together.
To bake the salmon I used a baking sheet with a rack. Spray the rack with nonstick cooking spray so the salmon doesn’t stick to it then set it to the side.
I used two salmon fillets that totaled 12 ounces. Take the first piece of salmon and dip both sides in the egg.
Now dip both sides of the salmon in the panko mixture. Place the salmon skin side down on the baking sheet rack.
Repeat with the second piece of salmon.
Bake the salmon for 15 minutes or until the internal temperature reaches 125-130 degrees. Depending on the thickness of the salmon it could take a few less or a few more minutes.
Serve with your favorite sides and you have a delicious, filling meal!

Yield: 2 servings

- 2 salmon fillets
- 1 egg
- 1/4 cup Panko breadcrumbs
- 1/4 cup Parmesan cheese, shredded
- 2 tablespoons fresh parsley
- 1/4 teaspoon garlic powder
- Pinch of salt
- Lemon slices (optional)

Preheat oven to 400 degrees F.

In a small bowl whisk the egg.

In a shallow bowl add the Panko breadcrumbs, shredded Parmesan, parsley, garlic powder and salt. Mix together.

Spray a baking sheet rack with nonstick cooking spray and set to the side.

Take one salmon filet and dip both sides in the egg mixture, then the Panko mixture. Place the salmon on the baking sheet skin side down, then repeat with the second piece of salmon.

Bake 15 minutes or until the internal temperature reaches 125-130 degrees.
