Here’s what you need to make Cucumber Salmon Bites:
- English cucumber
- Smoked salmon
- Reduced fat cream cheese
- Reduced fat sour cream
- Lemon
- Fresh dill
- Garlic
I used reduced fat sour cream but you could also use fat free Greek yogurt. With the new plan Greek yogurt is no longer zero points for me so I used sour cream.
Instead of using a regular cucumber I used a large English cucumber. It’s a little bit sweeter than a regular cucumber and it doesn’t need to be peeled or seeded.
That makes it easier to work with and it saved some time.
You’ll want the cream cheese to be room temperature, that will make it much easier to mix. To make the cream cheese mixture I started by adding the cream cheese, sour cream, fresh lemon juice, fresh dill and garlic to a small bowl.
I used a hand mixer to blend it all together, then set it aside.
After I washed off my English cucumber I sliced it into 30 pieces. You want the cucumber to be thick enough to hold the smoked salmon and cream cheese mixture.
Next I cut the smoked salmon into 30 pieces. I bought 4 ounces of smoked salmon which worked out perfect.
Put a slice of salmon on top of each cucumber. For the cream cheese mixture I added it to a piping bag then topped each piece of salmon with it.
Once that was done I topped the little bites with some fresh dill. You could also add some fresh cracked black pepper.
It’s a perfect appetizer that is so easy to make!
