Copycat Chipotle Chicken Burrito Bowl

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 1 cup jasmine rice, uncooked
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Juice from one lime
  • 1/2 cup cilantro, chopped

Optional toppings:

  • Corn, lettuce, Pico de Gallo, avocado, cheese, black beans, onions, sour cream, Greek yogurt, black beans (doublecheck points if using these ingredients)

Instructions

  • Cook the rice in a rice cooker or according to the directions on the package.
  • While the rice is cooking add the ground coriander, cumin, chili powder, salt, black pepper, garlic powder and onion powder to a small bowl. Add to both sides of the chicken.
  • Cook the chicken 4-5 minutes on each side in a grill pan.
  • Add the lime juice and cilantro to the rice, stir together.
  • Assemble the bowls by adding 1/2 cup of rice and 1/4 of the chicken to four bowls. Add any additional toppings.
