This lightened up Egg Salad is perfect for a filling lunch!
You can make egg salad sandwiches, lettuce wraps or eat it with crackers.

I lightened up the egg salad by using light mayonnaise. You could also use fat free Greek yogurt.
My favorite way to make hard boiled eggs is in the Instant Pot. It’s easy and the eggs always peel perfectly.
To make hard boiled eggs in the Instant Pot I start by adding the trivet to the pot. Place the eggs on the trivet then add a cup of water.
Secure the lid and lock it. Make sure it’s in the sealing position. Press the manual button and set the time for 5 minutes.
Once the time is up let the pressure release naturally for 5 minutes, then release the pressure and remove the lid.
Carefully remove the eggs, I use tongs. Add the eggs to a bowl of ice water and let them cool.
After the eggs have cooled, it’s time to make the egg salad! (You can also refrigerate the eggs until you are ready to make the egg salad.)
Peel the eggs and separate the yolks from the egg whites. Add the yolks to a medium bowl.
Use a fork to mash the egg yolks.

Add the light mayonnaise, mustard, garlic powder, onion powder, salt and pepper. Stir together.

Add the egg whites, celery and chives and mix together.

- 4 hard boiled eggs
- 1/4 cup light mayonnaise
- 1 teaspoon mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons celery, chopped
- 1 teaspoon fresh chives, chopped

Peel the eggs. Separate the egg yolks from the egg whites and add them to a medium bowl.

Use a fork to mash the egg yolks. Add the mayonnaise, mustard, garlic powder, onion powder, salt and pepper. Mix together.

Cut the egg whites into small pieces. Add the egg whites, celery and chives to the yolk and mix together.

Serve as is, in a lettuce wrap, with crackers or as a sandwich.
