These Southwest Chicken Egg Rolls are perfect for an appetizer, lunch or even dinner!

You can cook them in the air fryer or bake them in the oven. They’re also low in points!

Only 2 points each for blue and purple, with green you can have one for 4 points or two for 7.

They are filled with chicken, corn, black beans, seasonings, cheese, salsa and cilantro. There are so many different flavors going on, you’re going to love every bite!

Cooked rotisserie chicken works perfect for this recipe if you’re in a hurry. If not, you can cook your own chicken breast. I like to cook my own so I can add some garlic powder, salt and pepper to the chicken.

I serve these Southwest Chicken Egg Rolls with salsa or pico de gallo which doesn’t add any extra points.

Fat free sour cream is also great with them, just be sure to add any extra points.

Using egg roll wrappers is a great way to keep a recipe low in points. I’ve made Apple Pie Egg Rolls, Pizza Egg Rolls and Corned Beef Egg Rolls. They’re all low in points!

Making these egg rolls in the air fryer gives it the same crispy taste as frying them without all of the oil. If you don’t have an air fryer that’s ok, they taste great baked too.

If you haven’t worked with egg roll wrappers before don’t be intimidated. You simply place a couple spoonful’s of the filling in the center, fold the bottom over the filling then fold in the sides. Put some water on your finger and moisten the top corner of the egg roll wrapper and roll it up the rest of the way.

I was able to get 10 egg rolls out of the filling I made. If you don’t want to use all of the filling for the egg rolls you could also use it for tacos or a burrito.

What brand of egg rolls did you use? Mine did not crisp up very well in the air fryer - they almost seemed too thin. The inside filling is delicious though.

Ok...user error! I bought spring roll wraps! LOL! They were still tasty and less points. Husband and boys ate them up. Thanks!
