Egg Drop Soup is low in points, filling and delicious!

What you need to make Egg Drop Soup:
- Chicken broth
- Eggs
- Cornstarch
- Soy sauce
- Sesame oil
- Salt and white pepper
Instead of using regular chicken broth I used Better Than Bouillon chicken base. It was so much better than regular chicken broth!
I’ve been using it in all of my soup recipes lately, it’s that good.
You can usually find it at the grocery store by the other broths and soups.
For every 1 cup of broth you need you add 1 cup of water to 1 teaspoon of Better Than Bouillon.
To make this Egg Drop Soup I started by adding 2 cups of water and 2 teaspoons of Better Than Bouillon to a saucepan.
Turn the heat to medium-high and let it come to a simmer, stirring occasionally. Add in the sesame oil and soy sauce.
Next, add the cornstarch to a small bowl and mix it together with the water.
Slowly add the cornstarch mixture to the broth while stirring.
Lightly whisk together the eggs in a separate bowl.
Once the broth has thickened slowly add in the eggs while stirring the broth in a circular motion.
Ladle the soup into bowls and serve! I like top mine with green onion but that’s totally optional.

Yield: 2 servings

- 1/4 teaspoon sesame oil
- 1 teaspoon low sodium soy sauce
- 2 eggs

In a small bowl mix together the cornstarch and water. Slowly add to the chicken broth while stirring. Let simmer for about 3 minutes, or until thickened.

Lightly whisk the eggs in a small bowl. Slowly add the eggs to the broth while stirring in a circular motion. Optional: Top with green onions.
