One Pan Curry Chicken and Rice ($10 Dinner)

This one pan curry chicken meal is not just convenient but also economically friendly. With a budget of less than ten dollars, you can whip up a nourishing dinner for a family of four.

This recipe not only saves your time and energy but also helps you keep your budget in check.

The result? A belly-warming meal that’s both cost-effective and delectable.

This WW friendly meal can feed a family of four, or it’s great for meal prep.

I have two daughters, but only one will eat curry. That’s ok though, it means I will have leftovers for the next day. This dish is great for lunch or dinner.

The Ingredients:

I spent $9.43 on this meal. I’ll break down the ingredients and how much they cost.

Chicken breast was the protein I used. I shop at Kroger and they have a 1.25 lb. pack of chicken breast for only $5.

I grabbed an onion that cost $.85. All they had were huge onions, which was fine. I ended up using it with two different meals.

To add extra flavor to the rice I wanted to get a can of chicken broth. It was $.79.

Rice is usually $2 or more, so I came up with a little trick. Kroger had boxes of Rice-A-Roni on sale for $1. It’s flavored rice, but I didn’t use the seasoning packet.

The ingredients I had at home were garlic powder, onion powder, curry powder, and salt.

This meal is inexpensive, low in points, and easy to make. Each serving is approximately 1 1/3 cups for only 5 points.

How to Make One Pan Curry Chicken and Rice:

Start by chopping the onion and cutting the chicken into bite-size pieces.

Spray you nonstick pan with cooking spray. Add the onion and chicken, then season with the curry powder, garlic powder, onion powder, and salt.

Cook the chicken until it is fully cooked. Use a slotted spoon to remove the chicken from the pan, leaving any juice in the pan.

Cover the chicken so it stays warm.

To the pan, add the Rice-A-Roni (minus the seasoning packet) and chicken broth. Bring the rice to a boil, reduce the heat, cover, and simmer for 17 minutes.

When the rice is done cooking add the chicken back to the pan and the coconut milk. Stir together and heat for about 2 minutes.

I topped my dish with cilantro, which I had leftover from my $10 Black Bean Burritos.

  • 1 lb. boneless, skinless chicken breast
  • 1 yellow onion
  • 1 tablespoon yellow curry powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1 (7.2 ounce) box of Rice-A-Roni (discard the seasoning packet)
  • 14 oz. chicken broth
  • 1/2 cup unsweetened coconut milk

Instructions

  • Chop the onion and cut the chicken into bite-size pieces.
  • Spray a nonstick pan with cooking spray. Add the onion and chicken, then season with the curry powder, garlic powder, onion powder, and salt.
  • Cook the chicken until it is full cooked. Use a slotted spoon to remove the chicken from the pan, leaving any juice in the pan. Cover the chicken so it stays warm.
  • To the pan, add the Rice-A-Roni (minus the seasoning packet) and chicken broth. Bring the rice to a boil, reduce the heat, cover, and simmer for 17 minutes.
  • When the rice is done cooking add the chicken back to the pan and the coconut milk. Stir together and heat for about 2 minutes.
  • Optional: Top with chopped cilantro.
