Chop the onion and cut the chicken into bite-size pieces.
Spray a nonstick pan with cooking spray. Add the onion and chicken, then season with the curry powder, garlic powder, onion powder, and salt.
Cook the chicken until it is full cooked. Use a slotted spoon to remove the chicken from the pan, leaving any juice in the pan. Cover the chicken so it stays warm.
To the pan, add the Rice-A-Roni (minus the seasoning packet) and chicken broth. Bring the rice to a boil, reduce the heat, cover, and simmer for 17 minutes.
When the rice is done cooking add the chicken back to the pan and the coconut milk. Stir together and heat for about 2 minutes.
Optional: Top with chopped cilantro.
