One Pan Curry Chicken with Rice ($10 Meal)

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 1 yellow onion
  • 1 tablespoon yellow curry powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1 (7.2 ounce) box of Rice-A-Roni (discard the seasoning packet)
  • 14 oz. chicken broth
  • 1/2 cup unsweetened coconut milk

Instructions

  • Chop the onion and cut the chicken into bite-size pieces.
  • Spray a nonstick pan with cooking spray. Add the onion and chicken, then season with the curry powder, garlic powder, onion powder, and salt.
  • Cook the chicken until it is full cooked. Use a slotted spoon to remove the chicken from the pan, leaving any juice in the pan. Cover the chicken so it stays warm.
  • To the pan, add the Rice-A-Roni (minus the seasoning packet) and chicken broth. Bring the rice to a boil, reduce the heat, cover, and simmer for 17 minutes.
  • When the rice is done cooking add the chicken back to the pan and the coconut milk. Stir together and heat for about 2 minutes.
  • Optional: Top with chopped cilantro.
