This is a quick and easy meatless meal that’s perfect for busy weeknights!
Instead of chicken broth you can substitute vegetable broth for a truly vegetarian meal.

Or you can add a chicken breast to make it a filling and low point meal.
The best part is everything cooks in one pot!
Starch from the pasta will help to naturally thicken the sauce and the broccoli cooks in the pot during the last couple of minutes.
It couldn’t be any easier!

How I kept it light:
To start with it’s packed full of zero point broccoli. It helps to make the portion sizes larger and helps make you full.
Mixing together fat-free half and half with chicken broth to cook the noodles helped to make a creamy sauce.
I used a nonstick pot so I could limit the amount of butter I used. One teaspoon of light butter was only 1 point and it was the perfect amount to sauté the garlic.
How to make One Pot Creamy Broccoli Pasta:
Melt the butter in a large nonstick pot, then sauté the minced garlic.
Add the chicken broth, half and half, onion powder, oregano, salt, and pepper. Bring to a simmer.
Pour in the noodles, cover the pot, and reduce the heat to low. Make sure the liquid is still simmering.
Cook the noodles according to the package directions making sure to occasionally stir them.
Add the broccoli during the last two minutes of cooking time.
Once the cooking time is done remove the lid and add the lemon juice and Parmesan cheese.
Let the pasta stand for 2 minutes to let the sauce thicken.

- 8 oz. medium pasta shells
- 1 teaspoon light butter
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup fat-free half and half
- 1/4 teaspoon onion powder
- 1/4 teaspoon oregano
- 3 cups broccoli, cut into small pieces
- 1 1/2 tablespoon lemon juice
- 3 tablespoons grated Parmesan cheese
- Salt and pepper, to taste
